Quickie Biscuits

This is a variation on a theme I came across by Mary Berry and Angela’s ‘Bake it with Love‘ site. It’s only got three ingredients and is dead easy. I’ve used a Thermomix but you can do it in any food processor or even by hand (though that’s harder work!).

Ingredients

This is to make 16 biscuits. The amounts in brackets make 24 biscuits)

100 g Butter (150g)

35g Smart Sugar (50g ordinary) (55g/75g)

150g Self-raising flour (225g)

A little milk

Method

Preheat oven to 180°C (or 160°C Fan)

Chop the butter up into small chunks, and add it into the Thermomix/processor bowl. Cream it for 2 minutes at speed 4.

Add the flour, and whizz for two minutes on reverse, speed 3. Scrape the sides down if necessary and whizz again. Keep it running and dribble a little milk in until the dough sticks together and rolls around the bowl.

Empty the dough out and roll it into a thick cylinder, cut it into 16/24 pieces. Roll each piece into a bowl, flatten it out and place the biscuits onto a prepared tray lined with baking paper. Leave a bit of space around each biscuit.

Dip a fork into water and press into the centre of each biscuit.

Cook for 18-20 minutes until the biscuits have gone a pale golden colour.
