Chicken and Chorizo Paella

Paella is a Spanish national dish and while purists may quail at this easy version, it tastes great! This serves four.

Ingredients

  • 2 medium chicken breasts (approx 200-250g each) cut into chunks
  • 2 small onions, finely sliced
  • 1 big garlic clove
  • 2 chorizo sausages, sliced
  • 1 tsp turmeric
  • 1 tsp paprika
  • 300g arborio rice
  • 850ml hot chicken or vegetable stock
  • 200g vegetables (frozen peas, or corn, or capsicum, or a combination)
  • Oil for cooking

Method

Heat 1 tsp oil in a pan on high. Add the chicken chunks, brown them all over but don’t cook them all the way through. Transfer them to a dish.

Reduce the heat to low, add onions and cook until soft. That could tkae about ten minutes. Add the garlic, stir for a minute and then add the chorizo sausage and fry them until the slices start to release their oils.

Stir in the turmeric and paprika and then add the rice. Cook the rice for a couple of minutes stirring all the while. Then add the stock. Bring it to the boil, then add the chicken and simmer for 20 minutes. Add the frozen vegetables and cook for another five minutes.

Serve it up!
