Protein Brownies

These are a variation on a Donna Hay recipe, already adapted for Thermomix use byVicki, the Thermomix Diva (www.thermomixdivarecipes.com…) , adding some extra protein by using lupin flour and reducing the calories by using a sugar/stevia mix.

Ingredients

  • 150g unsalted butter
  • 150g sugar/stevia mix
  • 75g unsweetened cocoa powder
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 35g lupin flour
  • 40g plain flour

Method

Preheat the oven to 160°C (or 140°C fan forced) and line a 20cm square baking tin with baking paper.

Place the sugar/stevia mix, butter and cocoa powder into the Thermomix and set it going at speed 2.5, 50°C for 3 minutes.

While it’s doing that, get the eggs and vanilla extract ready for action. When the 3 minutes is up, set Thermy going for 1 minute at speed 3 and crack the eggs through the hole in the top, followed by the vanilla extract. Keep it going for the full minute.

Add the flours, and mix for 3 secs at speed 5, scrape down the sides and do it again. It should be combined by now but if not give it one more whizz.

Pour the batter into the tin and bake for 30-35 minutes until the centre is just set.

Remove from the oven and leave it to cool in the tin, then cut it into 12 pieces.

Nutrition wise, each slice adds up as shown below. The use of smart sugar knocks around 50 calories off each slice, and the use of lupin flour adds 1.5g of protein per slice. Having said that, these are definitely in the ‘treat’ department rather than every day fare!
