Basic Quiche

Making the base

Ingredients

  • 130g plain flour
  • 45g lupin flour
  • Pinch of salt
  • 75g butter
  • Cold water

Method

Put everything except the water in the Thermomix (or food processor) and whizz (Speed 4 in the Thermy) until it looks like breadcrumbs. Keeping the processor running, slowly add the cold water until the pastry clumps together around the blades. Take it out of the processor, roll it into a bowl, wrap it in foil or clingfilm and put it in the fridge for at least half an hour.

Filling

Ingredients

  • 3 eggs
  • 150 ml milk
  • salt
  • pepper
  • mixed herbs (optional)
  • 100 g shredded cheese
  • Meat or fish and veges

Preheat the oven to 190°C.

Beat the eggs and milk together with the salt and pepper and herbs if you’re using them.

Take the pastry from the fridge and line a greased pie dish.

Put the filling in the bottom of the base. You can use cooked bacon, or cooked meat, or smoked salmon, with cooked courgettes or frozen corn or capsicum or anything that takes your fancy really.

Pour the egg mix over the filling, sprinkle the cheese over the top.

Cook at 190°C until the filling is set (at least 30 minutes, sometimes longer).
