Cheese Scones

Cheese scones are part of the staple diet of Australia and New Zealand and after trying a variety of different recipes and mixing and matching different bits, this is the one that we liked best.

Ingredients

  • 225g self raising flour
  • Pinch of salt
  • Pinch of cayene paper
  • 1 tsp baking powder
  • 55g butter
  • 100g grated cheese
  • 80-90mls milk, see recipe for exact amount
  • Extra cheese for topping

Method

Preheat the oven to 200°C or 190°C fan forced.

Put the flour, salt, cayenne pepper, and baking powder into the Thermomix or food processor and whizz it to mix thoroughly. Add the butter and whizz it until it looks like breadcrumbs.

Add the cheese and whizz until you can’t see individual strands of cheese.

Put the thermomix on reverse, speed 2, slowly add the milk until the dough clumps together around the blade.

Empty the dough out and flatten to about 2cm thick. Cut out the shapes and put them on a lined baking tray. Brush the top of the scones with milk and sprinkle the extra grated cheese on top.

Put it in the oven and cook for about 15 mins.
